Black rice also called “Purple rice” is a range of rice types from the species Oryza sativa. Black rice is called by many names like chak-hao in Manipur, kavuni rice in Tamil Nadu. The intense black color of black rice is attributed to its high anthocyanin content, which is significantly greater than that found in other grains, resulting in a deep purple hue when cooked.
